Marinade
I made the most delicious marinated chicken last night. Thought you might like the recipe:
Combine in bowl or zip lock bag:
1/2 cup honey
1/4 cup dijon mustard
1/4 soy sauce
1 T garlic paste (or minced garlic)
1/2 cup apple juice
1 t black pepper
Place 4-6 boneless, skinless chicken breasts in the marinade and stir/shake to coat. Leave in marinade in the fridge at least 30 minutes, but up 'til overnight is OK too.
When ready to cook, remove chicken breasts from marinade and place in hot pan greased with Pam or with 2 T of vegetable oil. Discard remaining marinade. Fry chicken 'til done, approximately 5-7 minutes on each side. Should carmelize the marinade nicely.
Serve with veggies (i.e., brocolli, corn, potatoes or green beans).
